Ingredients: 300g Free From Fairy gluten-free flour. 100g unsalted butter, softened. 100g caster sugar. 1 large egg, beaten. 1 tsp vanilla extract. Zest of 1 lemon. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp salt. Icing sugar, for dusting optional.
Instructions: Warm the oven up to 350F 180C and put parchment paper on a baking sheet. Melt the butter and mix it with the caster sugar in a large bowl until the mixture is light and fluffy. Mix in the vanilla extract, lemon zest, salt, ground cinnamon and nutmeg, and the egg that has been beaten. Mix everything together well. Mix the gluten-free flour in slowly while adding it to the wet ingredients. Keep doing this until a dough forms. Place the dough on a surface that has been lightly dusted with flour. Roll it out until it is about 5 mm thick. Using cookie cutters with Easter themes, cut shapes out of the dough and put them on the baking sheet that has been prepared. Put the biscuits in an oven that has already been heated for 10 to 12 minutes, or until the edges are just barely golden. After taking the biscuits out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Sprinkle with icing sugar if you want after it's cooled. Serve and have fun!
