I have many reasons to call her a pedophile, but let's entertain your views for now.
Firstly, what's the definition of a pedophile? An adult with the psychiatric disorder pedophilia, who's sexual fantasies and/or acts involve children.
Calypso may be biologically sixteen, (which I'm presuming that was the age she was when she was banished to Ogygia?), but it was stated that she has had word of the outside world through her servants. Which means she probably knows adult things too. She has the ability to weave clothes too, and no offence, but the only people I've ever heard of weaving things are old people, but I digress.
Her intent with anyone who comes to her island, obviously, is to be in a relationship with them. As stated in BOTL, she kept Odysseus on her island in the hopes that she could marry him. Similarly with Percy, she tried to seduce him.
While not stated in the PJO books, there's no evidence to prove that she didn't rape Odysseus, and no evidence to prove that her curse "to fall in love with everyone who comes to her island" doesn't expand to sexual attraction too.
(Let me add that her curse was something that Rick Riordan added, most likely to redeem Calypso's creepy behaviour.)
Her curse excuse falls flat when we remember that self-control exists. People suffering with pedophilia have the choice on whether they want to act on their fantasies, (props to pedophiles who get help instead of harming others), but Calypso doesn't do this. She chooses to date Leo, knowing that he's 4596 years younger than her.
Again with Rick Riordan trying to make this ship not creepy, he makes her act immature to infantilize her. And yet she has the brain and experience of a full grown adult?
She also understands sexual references, with her telling off Leo for calling her "mamacita", which is a term typically used to cat-call attractive/hot women.
