Warm and hearty, this Bacon Potato Soup is the perfect comfort food for National Soup Month. Creamy and loaded with bacon, it's a crowd-pleaser for sure!
Ingredients: 4 slices of bacon, chopped. 1 onion, diced. 2 cloves garlic, minced. 4 cups diced potatoes. 4 cups chicken broth. 1 cup heavy cream. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup shredded cheddar cheese. 2 green onions, chopped.
Instructions: In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving about 2 tablespoons of bacon fat in the pot. Add diced onions and minced garlic to the pot with the bacon fat. Saut until onions are soft and translucent. Add diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer. Cook until potatoes are tender, about 15-20 minutes. Use an immersion blender to partially blend the soup, leaving some chunks of potatoes for texture. Stir in heavy cream, salt, and black pepper. Simmer for an additional 5-10 minutes. Serve the soup hot, garnished with shredded cheddar cheese, chopped green onions, and the crispy bacon bits.
