Cooking To Prevent Diabetes
It appears that if you have prediabetes, which now effects 38% of Americans, not only the food you eat but the way you cook it influences blood sugar control. Cooking food until it has char marks or a brown crust creates advanced glycosylation end products/AGES. AGES raised inflammation, oxidation as well as insulin resistance. So if you are pre diabetic or diabetic avoiding frying or grilling and using steaming, poaching, or stewing maybe a preferred cooking method. Cooking Methods May Affect Diabetes Risk Dry-heat cooking that produces advanced glycation end products (AGEs) appeared to increase the risk of type 2 diabetes in a 1-year trial. The study included 49 obese individuals with metabolic syndrome who consumed a regular-AGE diet and 51 who consumed a low-AGE diet. The low-AGE diet reduced insulin resistance; modestly decreased body weight; and lowered AGEs, oxidative stress, and inflammation. The regular-AGE diet raised AGEs and markers of insulin resistance, oxidative stress, and inflammation. Low-AGE participants in the Diabetologiastudy were told to avoid frying, baking, or grilling foods and were encouraged to boil, steam, stew, or poach their meals throughout the study’s duration.
