Ingredients: 1 can chickpeas, drained and rinsed. 2 cups Swiss chard, chopped. 1 large sweet potato, peeled and diced. 1 onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon cumin powder. 1 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. 1 tablespoon olive oil. 4 whole wheat tortillas. 1 cup salsa. 1/2 cup Greek yogurt optional. 1/2 cup shredded cheese optional.
Instructions: Heat the olive oil in a big skillet over medium heat. Add the minced garlic and onion, and saut until the ingredients are soft. Add the chickpeas, diced sweet potato, paprika, chili powder, cumin powder, and salt and pepper. Cook until the chickpeas are golden brown and the sweet potato is soft. Add chopped Swiss chard and cook, stirring, until it wilts. Serve the whole wheat tortillas hot out of the microwave or another pan. Spoon half of the chickpea mixture onto each tortilla. Add salsa, shredded cheese, and Greek yogurt, if preferred, on top of each. To make burritos, fold the tortillas along their sides and roll them up. Enjoy and serve right away!
