Chicken Enchilada Chilaquiles is a delicious Mexican-inspired dish featuring shredded chicken cooked in enchilada sauce, layered with tortilla chips, and baked with a cheesy topping. It's easy to make and perfect for a hearty meal any day of the week!
Ingredients: 2 cups shredded cooked chicken. 1 can 10 oz red enchilada sauce. 1 cup chicken broth. 1 bag 10 oz tortilla chips. 1 cup shredded Monterey Jack cheese. 1 cup shredded cheddar cheese. 1/4 cup chopped cilantro. 1/4 cup chopped red onion. 1 avocado, sliced. 1 lime, cut into wedges.
Instructions: Before you start cooking, heat the oven to 375F 190C. Shred the chicken and mix it with the enchilada sauce and chicken broth in a large skillet. On medium heat, cook until everything is hot. Toss the tortilla chips around in the pan to coat them with the sauce after adding them. On top of the chilaquiles, sprinkle the Monterey Jack and cheddar cheeses. Put it in an oven that has already been heated and bake for 15 to 20 minutes, or until the cheese melts and bubbles. Take it out of the oven and add chopped red onion and cilantro. Add sliced avocado and lime wedges to the top of the hot dish.
