Pork and Black Bean Soup is a great way to warm up. With its tender pork, black beans, and fragrant spices, this hearty soup makes a delicious and filling meal any day. Put some lime juice on top of it to make it taste even more fresh.
Ingredients: 1 lb 450g pork loin, cubed. 1 cup black beans, soaked and cooked. 1 onion, finely chopped. 2 carrots, diced. 2 celery stalks, diced. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 6 cups chicken or vegetable broth. 2 teaspoons ground cumin. 1 teaspoon chili powder. 1 teaspoon smoked paprika. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro, chopped for garnish. Lime wedges for serving.
Instructions: In a large pot, heat olive oil over medium heat. Add cubed pork loin and cook until browned on all sides. Remove the pork from the pot and set aside. In the same pot, add chopped onion, diced carrots, and diced celery. Saut until the vegetables are softened. Add minced garlic, ground cumin, chili powder, and smoked paprika. Stir to combine and cook for an additional minute. Pour in the diced tomatoes with their juice, cooked black beans, and the browned pork. Mix well. Pour in the chicken or vegetable broth, season with salt and pepper, and bring the soup to a boil. Reduce heat, cover, and simmer for 30-40 minutes or until the pork is tender and flavors are well combined. Adjust seasoning if needed. Serve the pork and black bean soup hot, garnished with chopped fresh cilantro, and with lime wedges on the side. Enjoy this hearty and flavorful soup!

Instructions: Preheat the oven to 400F 200C. Season the chicken breasts with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken breasts and sear until golden brown, about 3-4 minutes per side. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through. Remove the skillet from the oven and transfer the chicken to a plate. Cover with foil to keep warm. Place the skillet back on the stove over medium heat. Add minced garlic and shallot, saut until fragrant. Deglaze the skillet with red wine, scraping up any browned bits from the bottom of the pan. Add chicken broth and simmer until the sauce is reduced by half, about 5-7 minutes. Stir in butter until melted and the sauce is smooth. Season with salt and pepper to taste. Serve the roasted chicken with the red wine sauce drizzled over the top. Garnish with fresh thyme sprigs. Pair with a glass of your favorite red wine. Enjoy!
