Ingredients: 1 cup coconut milk. 2 tablespoons cornstarch. 2 tablespoons matcha powder. 1/4 cup maple syrup. 1 teaspoon vanilla extract. Store-bought vegan tart shells or homemade if preferred.
Instructions: In a saucepan, whisk together coconut milk, cornstarch, and matcha powder until smooth. Heat the mixture over medium heat, stirring constantly until it thickens, about 5 minutes. Remove from heat and stir in maple syrup and vanilla extract. Allow the custard to cool slightly. Pour the matcha custard into tart shells. Refrigerate the tarts for at least 2 hours to set. Serve chilled and enjoy!
