Ingredients: 2 large potatoes, peeled and grated. 1 small onion, grated. 2 eggs. 1/4 cup all-purpose flour. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 cup vegetable oil for frying.
Instructions: Put the grated potatoes on a clean kitchen towel and squeeze out as much water as you can. Grate the potatoes and onion and mix them with the eggs, flour, salt, and black pepper in a large bowl. Mix everything together well. In a large skillet, heat the vegetable oil over medium-high heat. Put small pancake-shaped spoonfuls of the potato mix into the hot skillet. Use a spatula to make them flat. The pancakes should be fried for three to four minutes on each side, or until they are crispy and golden brown. Take the pancakes out of the pan and let them drain on paper towels to get rid of the extra oil. Do not cool. Serve hot with applesauce or sour cream.
