A hearty and gluten-free version of the classic stuffed pepper soup made in a slow cooker. It's packed with ground meat, bell peppers, rice, and a flavorful tomato broth.
Ingredients: 1 lb ground beef or ground turkey. 1 medium onion, chopped. 2 cloves garlic, minced. 4 large bell peppers, any color, chopped. 1 can 28 oz crushed tomatoes. 1 can 15 oz tomato sauce. 4 cups gluten-free beef or vegetable broth. 1 cup cooked rice gluten-free. 1 teaspoon dried basil. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon red pepper flakes adjust to taste. Fresh parsley or cilantro for garnish optional.
Instructions: Warm up the ground beef or turkey in a big pan over medium-low heat. Take out any extra fat and put the food in the slow cooker. When you're done, add the chopped onions and garlic. In a slow cooker, put together tomato sauce, cooked rice, dried basil and oregano, salt, black pepper, and red pepper flakes. Also add chopped bell peppers. Use a stir to mix. Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the bell peppers are soft and the flavors have mixed. Check the seasoning and make changes if needed.
