Brussels Sprouts and Pumfu with Sichuan Chili Crisp sauce

Not tofu but pumfu scramble. If you don't know what pumpu is it's a tofu alternative made out of pumpkin seeds. Today I scrambled that up with some curry powder and then put pickled peppers on it. I also toasted up some homemade whole wheat sourdough bread and peeled a small grapefruit from my Misfits box. Oh and I'm drinking a peach Zevia iced tea.

I made a Shepherdless Pie except I made it with Pumfu. A "tofu" from compressed Pumpkin Seeds. It was green! Really interesting. Very benign taste until you season it. Crumbles and browns really well. I forgot to take a picture of just the filling before I started to place the mashed potatoes on top but you can still see the green Pumfu peeking out. The finished product tasted great. Oh Boy! My first shot at cooking with Pumfu. Since it was an impulse buy I was unprepared… so had to sorta wing it with a recipe I found. I hope this is okay, as I had little energy & expended it all on caring for all my kiddos & making this, so it better be worth it! I'll have to see if it's possum safe, as I could use all the help I can get cutting corners by sharing things I make with the marsupials vs. having to plan separate meals. Pumfu soft corn tortilla tacos with salsa from lidl I'm not sure if that store is new to the US but it's definitely New to you New York. Pumfu is made by foodies I ordered it from vegan essentials. Com because it's made from pumpkin seeds it's a little green.
