Ingredients: 1 whole chicken about 4-5 pounds. 2 tablespoons olive oil. 1 teaspoon sea salt. 1/2 teaspoon black pepper. 1/2 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/2 teaspoon dried thyme. 1/2 teaspoon dried rosemary. 1/2 teaspoon dried sage.
Instructions: Preheat your oven to 425F 220C. Rinse the chicken inside and out under cold water and pat it dry with paper towels. In a small bowl, mix together the sea salt, black pepper, paprika, garlic powder, onion powder, dried thyme, dried rosemary, and dried sage. Rub the olive oil all over the chicken, ensuring it's evenly coated. Sprinkle the spice mixture over the chicken, making sure to cover it thoroughly, both inside and outside. Place the chicken on a roasting rack inside a roasting pan, breast side up. Roast the chicken in the preheated oven for about 75-90 minutes, or until the internal temperature reaches 165F 74C in the thickest part of the thigh.
