Ingredients: 2 cucumbers, thinly sliced. 1/2 red onion, thinly sliced. 1-2 red chili peppers, thinly sliced adjust to taste. 2 cloves garlic, minced. 1/4 cup fresh cilantro leaves, chopped. 2 tablespoons rice vinegar. 1 tablespoon soy sauce. 1 tablespoon honey. 1 teaspoon sesame oil. Salt and pepper to taste. Sesame seeds for garnish optional.
Instructions: Put the garlic, red onion, chili peppers, and cucumbers in a large bowl and mix them together. Soy sauce, honey, sesame oil, salt, and pepper should all be mixed together in a separate small bowl. Mix the cucumbers together, then add the dressing and toss to coat. Put it in the fridge for at least 30 minutes to mix the flavors. If you want, you can add fresh cilantro leaves and sesame seeds to the top before serving. Enjoy it cold!
