Cherry ice cream from @seriouseats This recipe seemed unnecessarily complicated so of course I had to try it. It turned out to be pretty easy, it just took some time. You start by roasting whole cherries in sugar in the oven. After about 50 minutes, I had nice soft cherries. I had to let them cool enough to pit them, then just squeezed the pit out of the soft cherries. Messy but easy. You take the pits and some cream and bring it to a simmer, then let them sit and steep off the heat. This is a big part of the reason I chose the recipe—I liked that you use the pits. Then blend up the cherries a bit, add them back to the juice, heat and reduce. Strain the cherry pulp leaving a bunch of really delicious juice. Add the strained cream. Whisk. Add lemon juice and salt. Chill. Churn. It’s so very cherry. And of course my cherries were so perfect, being just picked off the trees Thursday at @bloomfieldcherriesbrentwood. And, as if that wasn’t enough, I took a cherry cake muffin I made Thursday and had frozen, sliced it in half, shoved some cherry ice cream in there, and made the most amazing cherry cake ice cream sandwich. My eyes may have rolled back in my head, it was so good.
