These Grilled Chili Chicken Skewers go well with a tangy Cilantro Lime Pesto to make your BBQ more exciting. Great for a summer party or any other outdoor meal!
Ingredients: 1.5 lbs boneless, skinless chicken breasts, cut into chunks. 1/4 cup olive oil. 2 tablespoons chili powder. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Wooden skewers, soaked in water for 30 minutes. 1 cup fresh cilantro leaves. 1/2 cup fresh parsley leaves. 1/4 cup pine nuts. 2 cloves garlic. 1/2 cup grated Parmesan cheese. Juice of 2 limes. 1/2 cup extra-virgin olive oil.
Instructions: Put olive oil, garlic powder, onion powder, cayenne pepper, salt, and pepper in a bowl and mix them together. Make sure the chicken chunks are well covered when you add them to the marinade. Let it sit for at least 30 minutes. Warm up the grill over medium-high heat. Put chicken that has been marinated on skewers that have been soaked. For 12 to 15 minutes, turn the skewers over every so often until the chicken is cooked all the way through and has a nice char. Make the pesto while the chicken is on the grill. Put the parsley, cilantro, pine nuts, garlic, Parmesan, and lime juice in a food processor and blend them together. Pulse until the food is very small. While the processor is running, add the olive oil little by little until the pesto is smooth. Add pepper and salt to taste. Put chili chicken skewers on a grill and drizzle a lot of cilantro lime pesto over them. Enjoy your tasty and mouthwatering BBQ creation!
