I mean, as OSP showed in their EXTENSIVE look at the history of Mummies in Western horror fiction last Halloween (linked below), it's not that mummies as a trope aren't versatile the same way that vampires and werewolves in fiction can be, it's more they have a lot of additional extra baggage due to the trope being rooted in orientalism and colonialism.

Where the Tom Cruise Mummy failed was that it was intended to kick off a Universal Cinematic Monster Universe (planting the seeds for Dracula to show up etc.), but the decision to give Cruise control over the script led to it being a vehicle to promote Tom Cruise, and thus annihilate any attempts at doing something interesting with their worldbuilding.

Personally? If they wanted to do something new, have the mummy be a) heroic, and b) be the protagonist. Maybe have them be a sorcerer who in ancient times discovered a means to physical immortality, something of an abomination to Ancient Egyptians' religious beliefs in the afterlife, with their then choosing to stick around, forever, forgoing their own afterlife to keep people from accessing said secret for good or ill.

Western folk from more recent times presume that the mummy is a stereotypical Western idea of a shambling mummy, when really they're sentient and trying to prevent others from visiting a fate worse than death upon themselves Death Becomes Her-style. Effectively acting as an undead version of those "This Is Not A Place of Honor" nuclear waste warning signs.
