Ingredients: 2 cups rolled oats. 1 cup almond flour. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 1/4 cup cocoa powder. 1/4 cup almond butter. 1 tsp vanilla extract. 1/4 tsp salt. 1/2 cup dairy-free chocolate chips.
Instructions: Preheat oven to 350F 175C. Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal. In a large mixing bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, cocoa powder, almond butter, vanilla extract, and salt. Mix until well combined. Fold in dairy-free chocolate chips. Press the mixture firmly and evenly into the prepared baking pan. Bake in the preheated oven for 20-25 minutes, or until set. Remove from the oven and let it cool completely in the pan. Once cooled, lift the bars out of the pan using the parchment paper overhang and place on a cutting board. Cut into bars of desired size. Enjoy immediately or store in an airtight container for later.
