A flavorful and satisfying salad inspired by the classic flavors of a chicken gyro. This salad is packed with grilled chicken, fresh vegetables, and Mediterranean toppings, all drizzled with creamy Tzatziki sauce.
Ingredients: 2 boneless chicken breasts, sliced. 1 tablespoon olive oil. 1 teaspoon dried oregano. Salt and pepper to taste. 4 cups mixed greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup Kalamata olives, pitted. 1/4 cup feta cheese, crumbled. Tzatziki sauce for dressing.
Instructions: In a bowl, combine the sliced chicken, olive oil, dried oregano, salt, and pepper. Toss to coat the chicken evenly. Heat a grill or grill pan over medium-high heat. Grill the chicken slices for about 4-5 minutes on each side or until cooked through and slightly charred. Remove from heat and set aside. In a large salad bowl, arrange the mixed greens as the base. Top the greens with cherry tomatoes, cucumber slices, red onion, Kalamata olives, and crumbled feta cheese. Place the grilled chicken slices on top of the salad.
