This super-fast scrambled tofu recipe is perfect for a quick and nutritious vegan breakfast or brunch. Packed with protein and flavor, it's a satisfying alternative to scrambled eggs.
Ingredients: 200g firm tofu. 1 tablespoon olive oil. 1/4 cup diced onion. 1/4 cup diced bell pepper. 1/4 cup diced tomato. 1/2 teaspoon turmeric. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: To get rid of extra water, press the tofu and then break it up into small pieces. Set a pan on medium heat and add the olive oil. Put in the diced onion and bell pepper and cook them until they get soft. Add the tofu crumbles to the pan and stir them around well. On top of the tofu mix, add salt, pepper, turmeric, garlic powder, onion powder, and onion powder. Mix everything together well. Put in the diced tomato and cook for another two to three minutes, until everything is hot. If you want, you can add fresh parsley on top and serve hot. Take a bite of your scrambled tofu right away!
