These Peanut Butter Sandwich Cookies are a delightful treat that perfectly blend the flavors of peanut butter with a soft and chewy cookie texture. The sweet and nutty combination will satisfy any cookie lover's cravings.
Ingredients: 1 cup unsalted butter, softened. 1 cup creamy peanut butter. 1 cup granulated sugar. 1 cup packed light brown sugar. 2 large eggs. 2 teaspoons vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking powder. 1 1/2 teaspoons baking soda. 1/2 teaspoon salt. Additional granulated sugar for rolling.
Instructions: Turn on your oven and heat it up to 375F 190C. Put parchment paper on baking sheets. Mix the peanut butter, butter, white sugar, and brown sugar together in a large bowl until the mixture is smooth. Mix the vanilla extract and eggs into the mixture and beat them in well. Mix the flour, baking powder, baking soda, and salt together in a different bowl. Add the dry ingredients to the wet ones one at a time and mix them together until a dough forms. Roll the dough into 1-inch balls and coat them with more granulated sugar. Leave space between each cookie when you put the sugared dough balls on the baking sheets that have been prepared. Press down on each cookie with a fork to make a crisscross pattern. For 10 to 12 minutes, or until the edges are just beginning to turn golden, bake the cookies. Take the cookies out of the oven and let them cool for a few minutes on the baking sheets. Then, move them to wire racks to cool all the way down. As soon as the cookies are cool enough to handle, put some peanut butter on the bottom of one and put it between two other cookies.
