Cinnamon Swirl French Toast Cups These delightful French toast cups are bursting with cinnamon flavor and a sweet sugar coating, perfect for breakfast or a snack. Ingredients 2 cups all-purpose flour 1 cup granulated sugar 1 tablespoon baking powder 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 cup milk 1/4 cup butter, melted 1/4 cup vegetable oil 2 large eggs 1 teaspoon vanilla extract 1/4 cup granulated sugar 1 teaspoon ground cinnamon 1/4 cup butter, melted Instructions Preheat your oven to 350°F (175°C). Prepare a muffin tin with paper liners or lightly grease the muffin cups. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until evenly combined. In another bowl, whisk the milk, melted butter, vegetable oil, eggs, and vanilla extract together. Pour the wet mixture into the dry ingredients and stir until just combined. Its fine if there are a few lumps. Evenly distribute the batter into the muffin cups, filling each about 3/4 full. Place the muffin tin in the oven and bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Let them cool in the pan for a few minutes, then transfer to a wire rack. While the muffins are cooling, mix the sugar and cinnamon in a small bowl. Melt the butter in another bowl. Dip the tops of the warm muffins into the melted butter, then into the cinnamon sugar mixture, making sure they are well coated. Serve your Cinnamon Swirl French Toast Cups warm or at room temperature. Store in an airtight container at room temperature for up to 3 days or freeze for up to a month.
