This Roasted Cauliflower and Garlic Pasta is a tasty and filling vegetarian dish made with roasted cauliflower and pasta that has been mixed with garlic. It's easy to make and full of great flavors that everyone at the table will love.
Ingredients: 1 head cauliflower, cut into florets. 4 cloves garlic, minced. 3 tablespoons olive oil. Salt and black pepper to taste. 8 ounces pasta of your choice. 2 tablespoons chopped fresh parsley. Grated Parmesan cheese for serving.
Instructions: Preheat the oven to 425F 220C. In a large bowl, toss cauliflower florets and minced garlic with olive oil until evenly coated. Spread the cauliflower mixture on a baking sheet lined with parchment paper. Season with salt and black pepper to taste. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through. Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the roasted cauliflower and garlic mixture to the skillet, along with the cooked pasta. Toss everything together until well combined and heated through, about 2-3 minutes. Remove from heat and sprinkle with chopped fresh parsley. Serve hot with grated Parmesan cheese on top.
