Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/3 cup vegan chocolate chips.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, combine almond flour, coconut flour, baking soda, and salt. Add melted coconut oil, maple syrup, and vanilla extract to the dry ingredients. Mix until well combined. Fold in vegan chocolate chips. Using a tablespoon, scoop out dough and roll into balls. Place them on the prepared baking sheet and flatten slightly with your palm. Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your crispy chocolate chip cookies!
