Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/2 teaspoon ground cloves. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 cup canned pumpkin puree. 1/2 cup strong brewed coffee, cooled. 1/4 cup milk. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with liners. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. In another bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the pumpkin puree. Mix in the brewed coffee, milk, and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients and mix until the batter is smooth and well incorporated. Fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
