||• Kale & Potato Omelette Topped /w Kale Chips I love making omelets. This happens to be one of my favorite. It's filled with crispy potatoes, chives, kale, and tomatoes. Usually I put a little sriracha sauce on it and eat up, but today I wanted to elevate the omelette. So I made kale chips. Dusted them with cayenne pepper and sea salt for flavor. Along side the omelette I served fresh salsa and a curry Greek yogurt.
