Ingredients: 1 cup gluten-free oats. 1/2 cup ground walnuts. 1/2 cup almond flour. 1/4 cup brown sugar. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Start by heating the oven to 350F 175C. Gluten-free oats, ground walnuts, almond flour, brown sugar, and salt should all be mixed together in a bowl. Melt the coconut oil and mix it with the maple syrup and vanilla extract in a different bowl. Add the wet ingredients to the dry ones and mix them together until a dough forms. The dough should be shaped into small biscuit rounds with your hands. Place the rounds on a baking sheet lined with parchment paper. Use the back of a fork to slightly flatten each biscuit to make a crisscross pattern. After the oven is hot, bake the biscuits for 12 to 15 minutes, or until they turn golden brown. Take them out of the oven and set them on a wire rack to cool. Have fun with your gluten-free Scottish oat and walnut cookies!
