PERFECTLY CRISPY TOFU
After several tries I am feeling more confident about being able to cook perfectly crispy restaurant-quality tofu. Maybe not the healthiest preparation but definitely the most delicious! Here is my method - if you have tips and/or other ideas, please share!
1. Buy extra firm tofu - the firmest you can get
2. Remove block of tofu from watery packaging (cut a hole in the packaging and let the water drain out). Wrap the block of tofu in a paper towel and gently squeeze to soak up some of the excess water.
3. Cut the block into 1 inch squares. Heat vegetable oil over medium-high heat in a large skillet (veg oil should be about 1/2 inch deep).
4. While vegetable oil heats (2-3 min), dredge tofu squares in flour. For a variation, you can season the flower based on how you're using the tofu!
5. Place flour coated tofu squares into hot oil. Cook about 6 minutes and then, using tongs, turn over. Cook six minutes more on the other side, or until golden and crispy!
6. Remove tofu to a paper-towel over a plate, to drain some of the excess oil. Toss in the seasoning or sauce of your choice. OR, add other elements of your stir-fry to the hot pan (i.e. vegetables), add seasoning (i.e. teriyaki sauce), and add the tofu back at the last minute to heat through and finish the dish.
For the tofu pictured above, I kept the pan hot and added 3 minced garlic cloves, 2 T maple syrup, 1/4 tsp paprika, salt and pepper, heated for about 30 sec, and then added the tofu back into the pan to coat and cook for about 1 min more. If you use something sugary or sticky like maple syrup, honey, teriyaki etc, I would then recommend removing to parchment paper, not paper towels as I did here as the tofu may be prone to stick to the paper towels. :)
