Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup honey or maple syrup. 3 large eggs. 1/4 cup coconut oil, melted. 1/4 cup fresh lemon juice. 1 tablespoon lemon zest. 1 teaspoon baking soda. 1/4 teaspoon salt.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, combine almond flour, coconut flour, baking soda, and salt. Add in the eggs, honey or maple syrup, melted coconut oil, fresh lemon juice, and lemon zest. Mix until well combined. Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
