Healthy Muffins • recipe inspired by Cheryl from the @netherley_beach_house . Swipe right to second pic for visual representation of ingredients. . - 3 cups nutty wheat or add 1 cup oats to make up the three cups. (I used Jungle oats but have used regular oats before) - 1/2 cup sugar, if you prefer it sweeter you can add up to 1.5 cups sugar (it's another forgiving recipe) - 1 tsp salt - 1 tsp bicarbonate of soda - 1 grated apple - 1 grated carrot - 1 mashed banana (I've used pineapple, pears and coconut before so experiment) . - 375ml of buttermilk (Or if milk is about to go off add a teaspoon of lemon juice and make your own buttermilk, not just with milk that's nearly off, normal milk works just fine but mine was turning yesterday so I just made it into buttermilk) . - Mix dry ingredients well - Mix fruits and carrot into the buttermilk and let it stand for 10 mins or so. - mix wet into dry ingredients and make sure you get all the dry bits. - place in muffin tins. This amount does 24 muffins or if you have larger tins probably 12. - place in a 180C preheated oven for 20mins or so - use a toothpick to make sure they are cooked. (They are quite moist) .
