1 Pak choi, separated and washed
1 Eye bird chilli, sliced (optional)
1. Season the tuna fillet both sides with salt and pepper.
2.Fill a quarter of a pot with water, bring it to boil, place a strainer on top and add in the pak choi leaves in order to steam cook them for about 8-10 minutes.
2.Place a pan on high heat, put a tablespoon of olive oil in or use grill and put the tuna fillet in. Let it cook for about 2-3 minutes each side or until golden brown in the pan or nicely grilled .
3.Time to prepare the sauce. In a small bowl put your honey and in a small pan heat up the sesame till golden brown. By doing this the essential oils of the sesame come out and their aroma is released. Put the warm sesame now in with the honey and mix up well. To make it crunchier instead of honey you can use caramel.
4.Take the tuna off the heat, and place on a chopping board. Now, when you take a fillet of the heat it will start drying out, so put a tablespoon of olive oil or a teaspoon of honey for this recipe and spread it on top, this will help your fillet to stay nice and moist. Slice the tuna in fine slices.
5. Finally, take the pak choi off the heat and cool it fast with cold water. This is called blanching, so by doing this you keep the texture of the boiled vegetable and it does not get soggy. Place it now in a mixing bowl with garlic, chilli and soy sauce and serve in a side plate.
