Chia Pudding

1 can (400 ml) coconut milk 1/2 cup water 1/2 cup chia seeds 1/4 cup pure maple syrup 1 tsp pure vanilla extract 1/4 tsp sea salt

Whisk all of the ingredients together in a medium-sized glass bowl. Put in fridge to chill, ideally overnight.

Date Caramel

2 cup Medjool dates, pitted and chopped 1 can (400 ml) coconut milk 1/4 cup tahini 1/2 tsp sea salt 1 tsp pure vanilla extract

Place all of the ingredients into a high-speed blender. Blend on high until smooth and creamy.

In morning, create parfaits by layering the chia seed pudding and date caramel in small glass jars. Top with toasted coconut flakes/chips and/or fresh fruit.
