And the chopped greens sautéed with onions and a hint of vinegar seemed happy to be layered between steamed lengths of naked carrots and grated parmesan. Both, the béchamel, a little less smooth than anticipated, and the on-the-thick-side hand rolled #sfoglia, seemed perfectly at peace with bran be-speckled whole-wheat flour. The meditative process of making and pre-cooking the night before felt like going to a spa. I slept like a rock. And the next day, with a short pop in the wood burning oven, comfort and pleasure were served to all. Even though I know I should garner the patience to wait until the undisturbed dish cools and settles before cutting into it, I have to admit, this is the kind of #hotmess I have no disappointment finding myself in the middle of. ::: ::: ::: La mia intuizione era giusta.
