These Vegan Cinnamon Roll Granola Bars are a delicious and easy-to-make snack. They are made with wholesome ingredients and are perfect for breakfast or a midday treat.
Ingredients: 1 cup rolled oats. 1/2 cup raw pecans, chopped. 1/4 cup almond butter. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. 1/8 teaspoon salt.
Instructions: Warm the oven up to 350F 175C and line a 9x5-inch loaf pan with parchment paper, leaving some extra to make it easy to take off. Place oats and pecans that have been chopped on a baking sheet. Bake for 8 to 10 minutes, or until the nuts are lightly toasted. Put the food in a big bowl. Put almond butter, maple syrup, vanilla extract, cinnamon, and salt in a small saucepan and heat it over medium-low heat. To make the mixture smooth and hot, stir it for about two to three minutes. Pour the almond butter mix over the pecans and oats. Mix everything together well. Firmly and evenly press the mixture into the loaf pan that has been prepared. Smooth the top with the back of a spoon. Put it in the oven for 18 to 20 minutes, or until the edges turn golden brown. Let it cool in the pan for 30 minutes, then use the extra parchment paper to move it to a cutting board. Make bars out of it. Keep in a container that doesn't let air in for up to a week at room temperature, or freeze for longer storage.
