Ingredients: 1 cup dairy-free chocolate chips. 1/2 cup coconut cream. 1 tablespoon maple syrup. 1 tablespoon instant espresso powder. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Put coconut cream in a small saucepan and heat it over low heat until it's hot but not boiling. Once it's cool, add the chocolate chips and stir them in until they melt and become smooth. Salt, espresso powder, maple syrup, and vanilla extract should all be added. Mix everything together well. Wait a few minutes for the frosting to cool down before you pipe or spread it on cookies, cupcakes, or cakes.

Ingredients: 1 and 3/4 cups all-purpose flour. 1 and 1/2 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 1 and 1/2 teaspoons baking powder. 1 and 1/2 teaspoons baking soda. 1 teaspoon salt. 2 eggs. 1 cup buttermilk. 1/2 cup vegetable oil. 2 teaspoons vanilla extract. 1 cup boiling water. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 2 tablespoons instant espresso powder. 1/4 cup heavy cream. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Add the cocoa powder, baking powder, baking soda, and salt to a large bowl. Use a sieve to mix the ingredients together. In a separate bowl, mix the eggs, buttermilk, oil, and vanilla extract. Mix everything together well. Add the hot water and stir until the batter is smooth. It's okay that the batter isn't very thick. The batter should be about two thirds of the way up each cupcake liner. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down. In a different bowl, beat the butter until it is smooth. Mix the instant espresso powder and powdered sugar together by beating them together well. Add the vanilla extract, heavy cream, and a pinch of salt. Mix the buttercream well until it's fluffy and light. Once the cupcakes are cool enough to handle, pipe or spread the espresso buttercream on each one. If you want, you can add some cocoa powder or chocolate shavings on top. Have fun with your tasty Espresso Buttercream Chocolate Cupcakes!

Stir until well combined and the mixture starts to come together. Fold in the dairy-free chocolate chips. Using clean hands, roll the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper. Chill the energy bites in the refrigerator for at least 30 minutes to firm up. Once firm, transfer the energy bites to an airtight container and store them in the refrigerator for up to a week. Enjoy as a quick snack or pre-workout boost!

Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup buttermilk. 1/2 cup strong brewed espresso, cooled. For Mini Spiced Gingerbread Houses:. Gingerbread cookie dough store-bought or homemade. Royal icing for decorating.
Instructions: Preheat your oven to 350F 175C. Grease and flour two 8-inch round cake pans. In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. In another large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Add the dry ingredients alternately with the buttermilk and brewed espresso, beginning and ending with the dry ingredients. Mix until just combined. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely. While the cakes cool, prepare your mini spiced gingerbread houses using gingerbread cookie dough. You can use small house-shaped cookie cutters or create your own templates. Bake according to the dough's instructions and let them cool. Once the cakes and gingerbread houses are completely cooled, decorate the gingerbread houses with royal icing and let them set. Assemble the espresso chocolate cake by placing one layer on a serving plate, spreading a layer of icing on top, and then placing the second layer on top. Ice the top and sides of the cake as desired. Decorate the top of the cake with the mini spiced gingerbread houses. Slice, serve, and enjoy your Espresso Chocolate Cake with Mini Spiced Gingerbread Houses!
