These grilled fish tacos with chipotle mayonnaise are a delicious and flavorful twist on traditional tacos. The smoky chipotle mayo adds a spicy kick that perfectly complements the tender grilled tilapia.
Ingredients: 4 tilapia fillets. 8 small corn tortillas. 1 cup shredded cabbage. 1 tomato, diced. 1/4 cup chopped cilantro. 1 lime, cut into wedges. 1/2 cup mayonnaise. 2 chipotle peppers in adobo sauce, minced. 1 tablespoon adobo sauce. 1 teaspoon cumin. 1 teaspoon garlic powder. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Warm the grill up to a medium-high level. Add chipotle peppers, adobo sauce, cumin, garlic powder, salt, and pepper to a small bowl and mix them all together. Put away. Add salt and pepper to the tilapia fillets and brush them with olive oil. Grill tilapia fillets for three to four minutes on each side, or until they are flaky and cooked all the way through. Warm up the corn tortillas on the grill for about 30 seconds on each side while the fish cooks. Put grilled tilapia fillets on warm tortillas to make tacos. Add chipotle mayonnaise, chopped cilantro, diced tomato, and shreds of cabbage on top. Put lime wedges on the side and serve.
