A tasty and juicy way to enjoy smoked chicken is with this BBQ Beer Can Chicken. A perfect balance of smokiness and seasoning is created by the spice rub and the moisture and flavor added by the beer can.
Ingredients: 1 whole chicken 4-5 lbs. 1 can of beer. 2 tbsp olive oil. 2 tbsp barbecue rub. 1 tsp garlic powder. 1 tsp onion powder. 1 tsp paprika. 1 tsp salt. 1/2 tsp black pepper.
Instructions: Set the smoker's temperature to 250F 121C. After washing, pat dry the entire chicken. To make a spice rub, combine olive oil, barbecue rub, paprika, onion, garlic, and black pepper in a small bowl. Make sure the chicken is thoroughly coated by rubbing it with the spice mixture. To make room for the spice rub, open the beer can and take a few sips, or carefully pour out a small amount. Make sure the chicken stands straight using its legs and the beer can as support when you place it inside the chicken's cavity. Place the chicken in the beer can on the smoker grates. The chicken should be smoked for about three to four hours, or until the thickest part of the thigh registers 165F 74C internally. When it's finished, carefully take the beer can out of the chicken. Before slicing, give the chicken ten to fifteen minutes to rest. Serve the tasty BBQ Beer Can Chicken and savor it!
