Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 cup snap peas, trimmed. 1 carrot, julienned. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon sesame oil. 2 tablespoons vegetable oil. Salt and pepper to taste. Cooked rice for serving.
Instructions: Combine the oyster sauce, sesame oil, and soy sauce in a small bowl. Put aside. In a big skillet or wok, heat up one tablespoon of vegetable oil on high heat. After adding the sliced chicken, stir-fry it for 34 minutes, or until it is cooked through. Take out and place aside from the skillet. Add the last tablespoon of vegetable oil to the same skillet. Stir-fry the ginger and garlic for 30 seconds or until aromatic. Add the carrot, snap peas, bell peppers, and broccoli. Stir-fry the vegetables for 45 minutes, or until they are crisp-tender. After the chicken has finished cooking, add the vegetables and sauce to the skillet. Stir-fry for a further two to three minutes, or until everything is heated through and thoroughly coated in sauce. To taste, add salt and pepper for seasoning. Over cooked rice, serve the hot stir-fried chicken and vegetables. Savor your tasty and comforting stir-fry!
