These Peanut Butter Cut Out Cookies are a delicious twist on traditional peanut butter cookies that are ideal for special occasions and holiday treats. Both kids and adults will enjoy the creamy peanut butter flavor combined with fun shapes and decorations.
Ingredients: 1 cup unsalted butter, softened. 1 cup creamy peanut butter. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. Extra flour for rolling. Colored sugar or sprinkles optional.
Instructions: In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough into two portions, wrap each in plastic wrap, and refrigerate for at least 1 hour. Preheat your oven to 350F 175C and line baking sheets with parchment paper. On a floured surface, roll out one portion of the dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets. If using colored sugar or sprinkles, decorate the cookies as desired. Gather the scraps and re-roll the dough to cut out more cookies. Repeat the rolling and cutting process with the second portion of dough. Bake the cookies in the preheated oven for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
