Mushroom Cheung Fun (Vegan Rice Noodle Rolls)
We went out for breakfast today and the restaurant had a really nice atmosphere. We ordered red rice crispy shrimp rice rolls, har gow, chΓ‘ng fΔn, char siu buns, noodles with pork sauce, xiao long bao, and tofu skin rolls.
The flavors actually reminded me more of what I used to eat in Thailand than northern Chinese food. But the noodles with pork sauce were completely different from what I expected. In Thailand they usually mix the noodles with barbecue pork sauce and serve them with char siu. When the dish arrived without a single piece of pork, I was a little shocked. The sauce was also so mild that it almost tasted like plain noodles. Luckily, everything else was delicious.
Cheung Fun with Shrimp (ι²θΎθ η²) A cheung fun recipe that yields a very thin rice roll with a silky smooth texture, juicy shrimp, and an aromatic seasoned soy sauce.

We had congee and Cheung fun
My Trial & Error Cooking School continues: Cheung Fun with pork & prawn filling. In Session 1 I tried different starches (rice flour with wheat vs. tapioca starch); in Session 2 different steaming times and steaming the rice noodle with the filling or steaming filling separately.
I think I have the winning recipe now sorted - woot-woot! π€π
