#spring rolls

- I always get way too much of certain ingredients, but... three red bell peppers, a bag and a half of shredded carrots, two mango, four avocado, a cup and a half of rice, and half a red cabbage should be enough for thirty rolls, based on the amt of leftover ingredients I had. Two mango might be overkill, but hey, it's yummy on its own. Never complain about extra mango.

- Bell pepper, mango, and cabbage can all be cut the night before to make your life easier. Carrot, too, if you don't buy it pre-shredded.

- I use a 1:1.5 ratio of basmati rice-to-liquid, with one half of the liquid being coconut milk and the other half being water. I spread it out on a baking tray and toss it in the fridge for half an hour or so to let it cool before assembling the rolls. I cut my avocado during the last part of this.

- I used two handfuls of butterfly pea flowers, which may have been overkill. I always see recommendations for just a few dried blooms, but my stuff never comes out blue enough with just that. So I 🎵fuck it up fuck it up fuck it up.🎵

- Serve with nước chấm or peanut sauce or sweet and sour or just have it plain. Do whatever makes your heart sing.
