Lentil ragu | Linssiragu
Ingredients:
1 large onion
4 garlic cloves
2 stalks of celery
2 large champignons or 6 small ones
3 teaspoons of crushed or ground coriander
2 teaspoons of fennel seeds
2 teaspoons of sugar
3 tablespoons of balsamic vinegar
1 can of crushed tomatoes
1 decilitre of dry beluga lentils
8 decilitres of water
2 cubes of vegetable stock
1 dl of vegan white wine
A dash of salt
Pasta
Vegan parmesan
Arugula
Method:
Peel and chop the onion and garlic into small pieces.
Heat up the olive oil on a large pan. Add the onion and garlic and sauté them in low heat for couple of minutes.
Chop the celery stalks. Add them to the pan to sauté with the onion and garlic for about 5 minutes.
Clean the champignons and chop them small. Add them to the pan. Sauté until all of the ingredients have softened.
Add in the sugar, spices and the balsamic vinegar. Mix well and cook for about 2 minutes. Rinse and strain the lentils.
Add the water, vegetable stock, crushed tomatoes, wine and lentils to the pan.
Let the sauce simmer in medium heat for about an hour or until the lentils have cooked. Add water if needed.
Serve with pasta, vegan parmesan and arugula.

1 iso sipuli
4 valkosipulinkynttä
oliiviöljyä
2 sellerin vartta
2 isoa herkkusientä tai 6 pientä
3 tl murskattuja tai jauhettuja korianterinsiemeniä
2 tl fenkolinsiemeniä
2 tl sokeria
3 rkl balsamiviinietikkaa
1 tlk tomaattimurskaa
1 dl kuivia belugalinssejä
8 dl vettä
2 liemikuutiota
1 dl vegaanista valkoviiniä
Ripaus suolaa
Pastaa
vegaaniparmesania
Rucolaa
Valmistus:
Pilko sipuli pieneksi. Kuori ja paloittele valkosipulinkynnet.
Kuumenna isolla pannulla oliiviöjyä ja lisää sipulit. Kuullota niitä miedolla lämmöllä pari minuuttia.
Paloittele sellerinvarret. Lisää ne pannulle kuullottumaan sipulien joukkoon noin viideksi minuutiksi.
Puhdista sienet ja paloittele ne pieniksi paloiksi. Lisää ne myös pannulle. Kuullota kunnes kaikki ovat pehmenneet.
Lisää joukkoon sokeri, mausteet ja balsamiviinietikka. Sekoita kunnolla ja kypsennä noin 2 minuuttia. Huuhtele ja valuta linssit.
Lisää pannulle vesi, liemikuutiot, tomaattimurska, viini ja linssit.
Anna kastikkeen kypsyä keskilämmöllä noin tunnin tai kunnes linssit kypsyvät. Lisää vettä tarvittaessa.
Tarjoile pastan, vegaanisen parmesaanin ja rucolan kanssa.
