Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 cups granulated sugar. 1/2 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1 1/2 tsp baking soda. 1 tsp salt. 2 large eggs. 1 cup buttermilk. 1/2 cup vegetable oil. 2 tsp pure vanilla extract. 1 cup boiling water. 8 oz cream cheese, softened. 1/2 cup powdered sugar. 1/2 tsp vanilla extract. 2 cups heavy cream. 1 1/2 cups semi-sweet chocolate chips. Chocolate shavings for garnish optional.
Instructions: Preheat your oven to 350F 175C and grease two 9-inch round cake pans. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, buttermilk, vegetable oil, and vanilla extract. Beat on medium speed until well combined. Stir in the boiling water until the batter is smooth the batter will be thin - that's okay. Pour the batter evenly into the prepared cake pans. In another mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined. Fold in the semi-sweet chocolate chips. Spread half of the cheesecake mixture over the top of one of the chocolate cake layers. Place the second chocolate cake layer on top and spread the remaining cheesecake mixture over it. If desired, garnish with chocolate shavings. Refrigerate the cake for at least 4 hours before serving to allow flavors to meld together. Slice, serve, and enjoy!
