Cold Winter Night Stew
This is what makes a warm feeling inside you on a cold winter night - guaranteed. Just chop and add to a large soup pot, cover and simmer until the barley is tender. How easy is that...try it and see.
1/2 head green cabbage, diced
6 c. water
2 t.+ salt to taste
1 t. pepper
1 t. smokey Spanish paprika
2 lg. carrots, chopped
2 lg. leeks, sliced into rounds - substitute sweet onions if you like
1 t.+ garlic to taste
1 turnip, diced
1 parsnip, diced
1/2 c. barley
1 bay leaf
In a large soup pot, add all ingredients, cover, turn to high until bubbling then turn down to simmer. Cook 20 - 30 min. until the barley is tender.
