Ingredients: 4 large eggs. 1/2 cup chorizo sausage, crumbled. 1/2 cup shredded cheddar cheese. 4 large flour tortillas. 1/4 cup diced onions. 1/4 cup diced bell peppers. Salt and pepper to taste. Cooking spray or butter for cooking.
Instructions: Add salt and pepper to a bowl and beat the eggs. Put a nonstick skillet on medium heat and spray it with cooking spray or melt some butter in it. Put the bell peppers and onions that have been diced into the pan and saut them until they get soft. Crumble the chorizo sausage and add it to the pan. Cook until it turns brown and is fully cooked. Add the eggs that have been beaten to the pan with the cooked chorizo. While cooking, stir the eggs every now and then until they are scrambled and done the way you like them. Spread out a flour tortilla on a clean surface and cover it with cheddar cheese shreds. Put some of the chorizo and scrambled egg on the tortilla. Fold the sides of the tortilla in to make a wrap, then roll it up. Do the same thing with the rest of the tortillas and filling. If you want, you can serve the Chorizo Egg Cheese Wraps hot with salsa or sour cream on top.
