Bulgogi Philly Cheesesteak

I was pretty poor, and saving up my money to move out of Colorado, but I spent too much money way too often to get one of your sandwiches because they were beautiful and perfect and created by a true genius.

Not a season has passed since I moved out of Colorado that I haven't thought of you, and your perfect sandwich.

I would go back every time I visited, which was few and far between, and at some point in the in-between, you and your shop moved or closed and I was devastated.

I look for your sandwich at every cheesteak joint I come across, even though I know it'll never be there.

I just finished a paltry replica of your art, made of Costco freezer section bulgogi (although the wiz was from scratch), and I promise when I have the extra money to possibly ruin some beef, I will learn to make a half-decent bulgogi, and every time I make one of these sandwiches, I will still think of you.

I hope your pillow is always cool, and your skin is always clear. I hope your belly is always full of just the food you wanted to eat. I hope your children are successful and you and your partner are wealthy, retired, and madly in love.

We have no idea how, we're a shoes off household and our cats are STRICTLY indoor cats. We don't know for sure, but he has 3 large-ish lesions on his arms that started as one small one and when we called the vet they said they don't have availability until Monday so just in case we need to quarantine him and I can't pet him or play with him because ringworm is highly contagious and can be passed from cat to human 🥺

After bringing Luna in to get her annual rabies shot today & getting the final refill we needed for Bulgogi's FIP medicine we were REALLY REALLY hoping to NOT have to go back to the vet for a long time, and now we're going back on Monday 🫩🫩🫩

buut they didn't give us the medicine refill we need when we went in today to get him weighed to reasses his dosage (he's gained weight which is sososo good so now he's taking .05 more of a dose lmao) and the vet thought we had a full dosage of medicine from the first time but it was only a 15 day portion (mind you this was on july 22nd) since it was actually given to us before he was officially diagnosed just so we could get it started because all signs were pointing towards it.

So now we need to go back and get the medicine tomorrow before he runs out because he's supposed to be taking it once a day, no breaks in between.

Which is a weird thing to be happy about, but now we finally KNOW and honestly that knowledge feels SO. DAMN. GOOD.
