I just want to give a shout out to the very nice man that used to run a Philly cheesesteak spot in Colorado Springs over by the Holley branch library, who introduced me to the world's most perfect fusion food:
Bulgogi Philly Cheesesteak
I was pretty poor, and saving up my money to move out of Colorado, but I spent too much money way too often to get one of your sandwiches because they were beautiful and perfect and created by a true genius.
Not a season has passed since I moved out of Colorado that I haven't thought of you, and your perfect sandwich.
I would go back every time I visited, which was few and far between, and at some point in the in-between, you and your shop moved or closed and I was devastated.
I look for your sandwich at every cheesteak joint I come across, even though I know it'll never be there.
I just finished a paltry replica of your art, made of Costco freezer section bulgogi (although the wiz was from scratch), and I promise when I have the extra money to possibly ruin some beef, I will learn to make a half-decent bulgogi, and every time I make one of these sandwiches, I will still think of you.
I hope your pillow is always cool, and your skin is always clear. I hope your belly is always full of just the food you wanted to eat. I hope your children are successful and you and your partner are wealthy, retired, and madly in love.
