Ingredients: 1 whole lobster about 1.5-2 pounds, cooked and meat removed. 200g spaghetti. 3 tablespoons olive oil. 4 cloves garlic, minced. 1 red chili, thinly sliced. 1 cup cherry tomatoes, halved. 1/4 cup dry white wine. 1/4 cup seafood stock. 1/4 cup fresh parsley, chopped. Salt and pepper to taste. 1 tablespoon lemon zest.
Instructions: Cook spaghetti according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced chili, saut until fragrant. Add cherry tomatoes to the skillet and cook until they start to soften. Pour in white wine and seafood stock. Allow the mixture to simmer for a few minutes until slightly reduced. Add the lobster meat to the skillet and toss gently to coat with the sauce. Season with salt and pepper to taste. Stir in chopped parsley. Add cooked spaghetti to the skillet and toss until evenly coated with the sauce. Remove from heat and sprinkle lemon zest over the dish.
