This healthy veggie burger patty is a perfect meatless alternative that's packed with flavor and nutrients. It's easy to make and will satisfy both vegetarians and meat lovers alike.
Ingredients: 1 cup cooked quinoa. 1 can 15 oz black beans, drained and rinsed. 1/2 cup grated carrot. 1/2 cup chopped spinach. 1/4 cup diced red onion. 1/4 cup breadcrumbs. 1/4 cup finely chopped mushrooms. 1/4 cup chopped cilantro. 1 teaspoon cumin powder. 1/2 teaspoon paprika. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: In a large mixing bowl, mash the black beans using a fork or potato masher. Add cooked quinoa, grated carrot, chopped spinach, diced red onion, breadcrumbs, chopped mushrooms, cilantro, cumin powder, paprika, salt, and pepper to the mashed black beans. Mix well to combine. Divide the mixture into burger-sized patties. Heat olive oil in a skillet over medium heat. Cook the burger patties for 4-5 minutes on each side or until they are golden brown and firm.
