Ingredients: 4 ripe peaches, peeled and sliced. 1 vanilla bean, split and scraped. 1/2 cup sugar. 1 cup water. 2 cups ice cubes. 1 cup peach nectar. 1 cup chilled club soda. Fresh mint leaves for garnish.
Instructions: Sliced peaches, vanilla bean, sugar, and water should all be put in a saucepan. Over medium heat, bring to a simmer and stir every now and then until the sugar dissolves and the peaches are soft. Leave it alone until it's cool enough to touch. Take out the vanilla bean. With a blender, blend the peach mixture until it is smooth. Put the puree through a fine-mesh sieve into a pitcher, and then throw away the solids. Put chilled club soda, ice cubes, and peach nectar in the pitcher. Mix things together well. Put the vanilla-peach cooler in the fridge for at least an hour before you serve it. Put the cooler into glasses, add fresh mint leaves on top, and serve cold. This simple summer cooler tastes great and is great for you.
