This White Bean and Kale Toast with Herbes de Provence is a tasty and healthy dinner idea for a busy weeknight. These toasts are filling and tasty. They are made with protein-rich white beans, nutrient-dense kale, and fragrant herbes de Provence. They're also easy to make and great for nights when you're busy and need a quick meal.
Ingredients: 4 slices of bread. 1 can 15 ounces white beans, drained and rinsed. 2 cups chopped kale leaves. 2 tablespoons olive oil. 1 teaspoon herbes de Provence. Salt and pepper to taste. Optional: grated Parmesan cheese for topping.
Instructions: Turn on your oven and heat it up to 375F 190C. Put 1 tablespoon of olive oil in a pan and heat it over medium-low heat. For about three to four minutes, or until the kale leaves wilt, add the chopped leaves. Use a fork or potato masher to mash the white beans in a bowl. To the mashed beans, add the cooked kale, the rest of the olive oil, salt, and pepper. Combine well. Arrange bread slices on a baking sheet. Top each slice with a small amount of the bean and kale mixture. Put it in an oven that has already been heated up and bake for 8 to 10 minutes, or until the topping is warm and the bread is toasted. If you want, you can add grated Parmesan cheese to the toasts before serving.
