These beef enchiladas are a delicious and comforting meal, perfect for a weeknight dinner or entertaining guests. They are filled with seasoned ground beef, black beans, and cheese, then smothered in enchilada sauce and baked until bubbly and golden. Customize with your favorite toppings for a satisfying Mexican-inspired dish.
Ingredients: 1 lb ground beef. 1 onion, chopped. 2 cloves garlic, minced. 1 can 15 oz black beans, drained and rinsed. 1 can 10 oz enchilada sauce. 1 can 4 oz diced green chilies. 2 cups shredded cheese cheddar or Mexican blend. 8 small flour tortillas. Salt and pepper to taste. Optional toppings: diced tomatoes, sliced olives, chopped cilantro, sour cream.
Instructions: Warm the oven up to 190C 375F. Put ground beef, onion, and garlic in a large skillet. Cook over medium-low heat until the beef is browned and the onion is soft. Get rid of extra fat. Add 1/2 cup of enchilada sauce, diced green chilies, and 1 cup of shredded cheese. Mix everything together. Add pepper and salt to taste. Put a little enchilada sauce in the bottom of a 9x13-inch baking dish. Put some of the beef mixture on each tortilla, then roll them up and put them in the baking dish seam-side down. Spread the rest of the enchilada sauce out evenly over the top of the enchiladas. Cover the enchiladas with the rest of the shredded cheese. For 20 to 25 minutes, or until the cheese melts and bubbles, bake in an oven that has already been heated. Serve hot, with extra toppings on top if you want.
