Emeril's Pork-and-Chorizo Burgers with Green-Chile Mayo are a delicious and flavorful twist on classic burgers. Ingredients: 1/2 lb ground pork. 1/2 lb fresh chorizo sausage, casing removed. 1/2 cup breadcrumbs. 1/4 cup chopped fresh cilantro. 1/4 cup diced red onion. 1/4 cup diced roasted green chiles. 1/2 tsp ground cumin. 1/2 tsp paprika. Salt and pepper to taste. 4 burger buns. Lettuce and tomato slices for garnish. 4 slices Monterey Jack cheese optional. 1/4 cup mayonnaise. 1 tbsp diced roasted green chiles for the mayo. 1/2 tsp lime juice for the mayo. 1/2 tsp lime zest for the mayo.
Instructions: In a bowl, combine ground pork, chorizo, breadcrumbs, cilantro, red onion, diced roasted green chiles, cumin, paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat your grill or stovetop grill pan over medium-high heat. Cook the burger patties for about 5-6 minutes per side or until they are cooked through and have nice grill marks. If using cheese, place a slice of Monterey Jack on each burger patty during the last minute of cooking and cover to melt the cheese. While the burgers are cooking, make the Green-Chile Mayo by mixing mayonnaise, diced roasted green chiles, lime juice, and lime zest in a small bowl. Toast the burger buns on the grill for a minute or two until they are lightly browned. Assemble the burgers by placing a lettuce leaf and a tomato slice on the bottom half of each bun. Add the cooked burger patty with or without cheese and top with a generous dollop of Green-Chile Mayo. Complete the burger with the top bun and serve immediately.
