The flavors of carrot cake are captured in these tasty and nutritious paleo-friendly Carrot Cake Energy Bites, which come in bite-sized convenient portions. They make a guilt-free dessert or are ideal for on-the-go energy. Ingredients: 1 cup grated carrots. 1/2 cup unsweetened shredded coconut. 1/2 cup raw walnuts. 1/2 cup pitted dates. 1/4 cup almond butter. 2 tablespoons honey or maple syrup. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. A pinch of salt. 1/4 cup unsweetened dried cranberries optional, for added sweetness. Additional shredded coconut for rolling optional. Instructions: Place the grated carrots in a clean kitchen towel and squeeze out any excess moisture. In a food processor, combine the grated carrots, shredded coconut, raw walnuts, pitted dates, almond butter, honey or maple syrup, ground cinnamon, ground nutmeg, ground ginger, and a pinch of salt. Process until the mixture comes together into a sticky dough-like consistency. If desired, add the unsweetened dried cranberries to the mixture and pulse a few times to incorporate. Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls. Optional: Roll the energy bites in additional shredded coconut for extra flavor and texture.
