This Slow Cooker Taco Casserole with Mrs. Dash and rice is a convenient and flavorful meal. It combines classic taco ingredients with the convenience of slow cooking, resulting in a hearty and satisfying dish.
Ingredients: 1 lb ground beef. 1 onion, diced. 1 bell pepper, diced. 1 cup rice. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn, drained. 1 can 15 oz diced tomatoes. 1 packet taco seasoning. 2 teaspoons Mrs. Dash seasoning. 1 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro optional. Salt and pepper to taste.
Instructions: Saute the ground beef, diced onion, and bell pepper in a pan until the beef is fully cooked. Put the slow cooker on high and add the cooked beef mixture. Put corn, black beans, rice, diced tomatoes, taco seasoning, and Mrs. Dash seasoning in the slow cooker. Use a stir to mix. For 4 to 6 hours, or until the rice is soft, cover and cook on low heat. Add shredded cheddar cheese and stir until it melts. If you want, you can sprinkle with chopped fresh cilantro. Before you serve, add salt and pepper to taste.
