Ingredients: 1 whole red snapper about 2-3 pounds, cleaned and scaled. 2 lemons, thinly sliced. 4 cloves garlic, minced. 2 tablespoons chopped fresh parsley. 2 tablespoons chopped fresh thyme. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat grill to medium-high heat. Make 3-4 diagonal cuts on each side of the snapper, about 1 inch apart, to allow even cooking. Season the fish inside and out with salt and pepper. Stuff the cavity of the fish with half of the lemon slices and half of the minced garlic. In a small bowl, mix together the remaining minced garlic, chopped parsley, chopped thyme, and olive oil to make a marinade. Brush the marinade all over the outside of the fish, including the cuts. Place the remaining lemon slices on top of the fish. Grill the snapper for about 6-8 minutes per side, or until the flesh is opaque and flakes easily with a fork. Carefully transfer the grilled snapper to a serving platter. Garnish with additional fresh herbs and lemon slices if desired. Serve immediately and enjoy!
